Here is a special little dish that is guaranteed to warm you from the inside out on those cold wintry days when you are snow bound or it’s just to cold to go out. This is also a dish that the kids will love, plus it is good for them.
As an amateur chef who loves to experiment with different tastes, I found this dish one that I could really introduce some difference to. Have a look.
Ingredients:
1 1/2 pounds of lean ground beef
1 large onion (finely chopped or diced)
2 garlic cloves (finely diced)
1 large red or green pepper (de-seeded and finely diced)
1 can 16 oz. of bell tomatoes (whole or rough chopped)
1/4 cup of liquid beef stock
1 tablespoon of tomato paste
1 tablespoon of sugar (or to taste)
salt to taste
1/2 teaspoon of chili powder (or to taste)
1 teaspoon dried pepper seeds (or to taste)
1 can 16 oz. of red kidney beans
1 tablespoon of sour cream
Here’s the creative part of this recipe.
1/2 pound of Ground Venison, or, Ground Lamb these two are optional but my favorite is the Venison. Either of these can be added to the pot with the ground beef to give more flavour to the mix.
Preparation:
In a dutch oven on medium heat start by sweating your onion and garlic in a tablespoon of olive oil. Slowly add in your meat browning it with your sweated onion and garlic.
Add in your red or green pepper allowing it also to sweat its juices into the mixture. Add in the chili powder and pepper seeds, and stir to blend it with all the other ingredients.
Now add in your tomatoes, tomato paste, and beef stock stirring to incorporate everything with the tomatoes.
Cover your dutch oven and allow all of this to slowly simmer together on a low heat for about 1 to 1 1/2 hours. In the last 10 to 15 minutes stir in your kidney beans and sour cream.
There are so many different ways of serving this up to your family. You can serve it plain with crackers, or dress it up a little with tortilla chips, or some toasted garlic bread, or over a bed of plain boiled rice.
For the kids you might want to pop into the pot some wieners in the last 5 minutes and serve them up as chili dogs the choice is yours.
