
Date Square Surprise

If you wish to enjoy a dessert that is surprisingly, sinfully delicious, yet nutritional too, you’ll love this dessert.
The quantities shown will allow you to make 2- 14″ X 9″ baking pans of delicious date squares.
Ingredients:
6 Cups Rolled Oats
4 Cups Pastry Flour (sifted)
1-1/2 Teaspoons salt
1-1/2 Teaspoons Baking Soda
2 Cups Dark Brown Sugar
1-1/2 Cups Salted Butter (soft)
4 Table Spoons (smooth) Peanut Butter
2 Pounds Pitted Dates
1-1/2 Cups Dried Cranberries
2 Cups Water
1 Cup Dark Brown Sugar
3 Teaspoons Lemon Juice
1 Cup Dark Chocolate Chip Morsels
Instructions:
Preheat oven to 350 degrees F.
In a bowl combine the following ingredients Rolled Oats, Flour, Salt, 2 Cups Dark Brown Sugar, Baking Soda, Soft Butter, and Peanut Butter. Mix these ingredients together until crumbly.
Press half of this mixture into the bottom of the 2- 14″X9″ Baking Pans.
In a Medium sized Sauce Pan, on (medium heat) combine the Dates, Cranberries, Water, and 1 Cup Dark Brown Sugar, and bring this mixture to a boil cooking until the mixture is thick. Add in the Lemon Juice and stir until Juice is incorporated into the mixture and remove from heat.
Spread the filling evenly over the base mix in the two baking pans and then sprinkle the Chocolate Chip Morsels evenly over top the Date mixture.
Spread the remaining Oats mixture over top of both pans and pop them into your oven baking them for about 20 minutes until topping is a golden colour and remove to cool.
Serving:
Serve once cooled, as is, or with a dolop of French Vanilla, or, Butterscotch Ripple Ice Cream, or, a dolop of Whipped Cream, and enjoy.
